"Yellow Bottle" >K by Olivos Milenarios del Maestrazgo

The company, Olivos Milenarios del Maestrazgo, ">K", headed by Salva Vives and Javier Reverte, really understand how to make and present EVOO, making an exceptional product.
This company began from a love for olive oil, which was passed down from predecessors to Salva Vives, Hilario Jaime and Ramon Mampel (Clot d'en Simo Co-operative).
"Olivos Milenarios" (Millenial olive trees), their first oil, was the start of a relationship based on the love for a product and a thousand-year-old culture. This summer, the oil from "Thousand-year-old olive trees" prompted me to finding out more about them and it is thanks to the difficulty in reaching them that these precious trees still remain standing, and the oil they produce is now bottled.
Among thousand-year-old olive trees and talks with Salva Vives and Hilario, I discovered the native varieties. They asked me to try a sample of "Canetera" which they were researching. There still remain companies which research how to improve their oils right from the cultivation stage, because there are still some wise people who study the trees and their fruit, not at University, but on the land, right next to the olive trees.
That's Hilario. Salva is the think-tank facing a panorama of national oils where mediocre is more popular than excellent. That's where me, the third stressful element comes in, after travelling over half of Spain and becoming more familiar with the Maestrazgo, I decided to proove the quality of the product and give the new oil a name.
The result of combining work in the fields, choosing the best product and an impressive study of image is "Yellow Bottle".
There are lots of good oils in Spain, a few are exceptional, and then there is... "Yellow Bottle" which is quite simply... a pleasure.
